Recipe: Make your own ice cream

Hi summer, sun and lashings of ice cream! We have filled the freezer with home-made goodies – made from watermelon, kiwi, coconut and almond milk. Here is the recipe.

The best thing about these ice lollies is that they not only look like slices of watermelon – they are extremely tasty and are fun to make too. Let the ice cream van drive by and take out the mixer!

Ingredients, 8 lollies:
1 small watermelon
1 lemon
1 dl sugar (if you like)
1 dl coconut and almond milk
4 kiwis
Chocolate buttons

Proceed as follows:

  • Cut out the melon flesh and add to the mixer. Add sugar and the juice from one lemon and mix to an even consistency.
  • Use a spoon to remove the foam from the surface and pour the mixture into the moulds. Remember to leave about 2 cm up to the edge.
  • Use a toothpick to place the chocolate buttons on the inside of the moulds. Put the cover on the mould and insert the lolly stick. Let it remain in the freezer for about 3 hours.
  • Remove the moulds from the freezer and add a layer of coconut and almond milk. Let it remain in the freezer for about 1 hour.
  • Mix the kiwi. Remove the moulds from the freezer and add the final layer. Put in the freezer one last time before the ice cream party can begin!
